Plan a day of ambling along roads that rarely see tourists. A cross-country tour I take whenever I'm down here is from Pouzol-Minervois locality almost to the road between Quillan and Perpignan, and back. It's a round trip of about 150km (say 100 miles), see Michelin map 235 "Midi-Pyrénées" (scale 1cm:2km). Here's the route (also on the map):
Pouzols - Lagrasse - Mouthoumet - Albière - Serre - Bugarach - Moulin/Cubière* - Ch. de Peyrepertuse** - Padern - Félines - Lézignan-Corbières - and back home.
*Stop off at Gorges de Galamus if you have the time.
**Worth a visit, if you have the time.
Note for drivers: this is a long day's drive, and there are almost no petrol/gas stations, so fill up before you start! Same for lunch - the bigger villages will have a cafe/bar or restaurant open, but the smaller villages will be closed up.

Set off at 9:00, returning about 21:00 or later. There are Cathar castles to see along the route too. Stop around noon for a real French country meal or take a packed picnic-style lunch with you. And there may be wine to buy at little producers along the route.
